Calamri_Rip-1Ingredients:
Squid
Bread
Parmesan
Eggs
Parsley
White wine
Shallot
Milk
Parmesan
Oil

Preparation

Cut the tentacles into small pieces. Brown the shallots in a little ‘of olive oil.
Combine the tentacles and brown. Add a glass of white wine and let evaporate.
Soaked in milk and then wring the bread and place in a bowl.
Add the cooked tentacles, eggs, Parmesan and parsley and mix until you have a thick paste.
Fill the squid for 3/4 and seal them with a toothpick.
In the same pan in which you did cook the tentacles, place the filled squid and after a first browned add white wine to be consumed until the end of cooking (35-40 minutes)
During cooking it is possible that part of the filling comes out: no problem! It will become part of the sauce …
